Caffé Pacori is a labor of love. Holly Monnette purchased her first espresso machine while living in Toronto and began cultivating a taste and passion for fine roasted coffees. She studied the art of gourmet coffee and then purchased Caffé Pacori and its well-known line of Gold Espresso, and Wood Roasted coffees. Now sole owner and president of Caffé Pacori, Holly maintains diligent, uncompromising adherence to the original Italian recipes using only the highest quality of certified coffee beans from Indonesia, Ethiopia and Central America.
Master Roaster, Eric Pierce, expertly transforms the green coffee beans into the perfect blends Caffé Pacori customers enjoy. Wood roasting is an all-but-lost art because it is more labor intensive and expensive, but the results cannot be matched by modern means using propane or natural gas. Eric uses only seasoned Alder wood to fire the roaster because of the steady heat and the subtle flavor the smoke adds to the coffee. Another advantage is that wood roasting reduces the acid in the coffee as the smoke from the fire seeps through the roasting beans.
Although Caffé Pacori strives to provide the ultimate coffee experience, it also focuses on sustainable business practices such as:
- Using only Alder wood from sustainable growers in the Northwest
- Recycling its burlap bags by donating them to local community gardens where they are used for weed reduction and seedling germination
